Brightened with fresh lemon and lifted with soda, it is a light, elegant serve with a distinctly Irish character.
Ingredients
35ml Skellig Six18 Artisanal Irish Gin
10ml elderflower liqueur
10ml fresh lemon juice
10ml simple syrup
15ml cloudy apple juice
Soda water, to to
Method
Fill a highball glass with ice. Add the Skellig Six18 Gin, elderflower liqueur, lemon juice, simple syrup and cloudy apple juice. Stir well to combine, then add more ice if needed. Top with soda water and give the drink a gentle final stir.
Garnish
A single lime wedge.
