Our whiskey finds its homeland on this rugged Skellig Coast but the journey will take it to all corners of the world. Created out of a celebration for those defining moments that build character, it is made to be enjoyed your way.
By working the stills in our own individual way, we are producing a range of limited-edition whiskeys. From our Six18 Step Collection to our Small Batch Premium Blend, our surroundings influence each expression’s flavour and taste profile.
Our cask finishes draw on our connections both to this place, and those further afield. From ex-bourbon casks and former peat casks to Pedro Ximénez Sherry casks paying homage to the centuries of maritime trade between us and European ports, all Atlantic-aged in our maturation warehouse next to the Ocean.
Our remote location with fresh air and plentiful rain that rolls in off the Atlantic, produces the purest water supply in one of Ireland’s soft water areas. This, combined with our mild climate from the nearby Gulf Stream, means we are perfectly positioned for developing and maturing our whiskey casks.
The temperature here very rarely goes beneath 4 degrees, which is the exact point at which whiskey stops taking on the wood. In Cahersiveen, our whiskey matures all year round.
Our casks sit in our maturation warehouse in the mild temperatures right beside the wild Atlantic Ocean. The cask draws in air in the warehouse, and the whiskey interacts with the wood to develop its unique character and colour. Different casks interact differently. A cask of whiskey is a complex living system of reactions.
Green Barley is the natural grain, unmalted. The Irish whiskey making tradition used Green/Unmalted barley and when distilled, it gives the whiskey a herbaceous ,spicy taste profile. Green Barley is mixed with malted barley, used in the unique triple distilled Irish whiskey Single Pot Still style A complex and sophisticated whiskey style.
Malted Barley is a key ingredient in the production of premium whiskeys. Malting is a trick on nature – Barley seeds are fooled into thinking they are germinating, and so starts release sugars to get ready to sprout..until heat stops that process. Malted grains have a distinctive profile when they are distilled.
Mountain Water. We use mountain to dilute the high-proof spirits from the cask before we bottle the whiskey. We get plenty of clean Atlantic rain here, and it rushes down the mountains by the distillery. The mineral content and purity of the water also influences the character of the final whiskey taste.
Whiskey is about patience – a scarce commodity in todays world. To use the precious label “Irish Whiskey”, the spirit must be matured in a wooden cask on the island of Ireland for a minimum of 3 years. Every day some whiskey vapour is released through the wood of the cask – the Angel’s Share, and older casks have a lot less whiskey than the day it was filled
We are bringing Irish Pot Still Whiskey home to Kerry and it is worth the wait. A traditionally Irish, time-honoured method of creating whiskey. This process is one that takes time, patience and maturity but one that makes the best-tasting whiskey in the world – authentic and timeless. This, coupled with terroir, our unique climate and location, results in a totally unique Skellig Six18 flavour.
This Place has been one of personal pilgrimage for centuries, from the 6th-century monks who built those 618 steps to start their Characterful Journey, to location scouts for internationally acclaimed films, such as Star Wars, who chose here as a location for Ahch-To, the site of the first Jedi Temple. Thousands of migratory seabirds return year after year to breed and rear their young on these wild, inaccessible cliffs. They all recognise this place as the wild sanctuary its inhabitants have known it to be for many generations.
