Our Whiskey

Our Skellig Six18 Whiskey

We are bringing Irish Pot Still Whiskey home to Kerry and we’re willing to wait for it. A traditionally Irish method, using a mash of malted and unmalted barley, which are then triple-distilled into 3 copper pot stills.

This process is one that takes time, patience and maturity; but one that creates the best tasting whiskey in the world – authentic and timeless. This, coupled with terroir, our unique climate and location, will result in a totally unique Skellig Six18 flavour. Lean Ar Aghaidh.

The Plans

In 2020, we order our Skellig Six18 Whiskey Distillery Plant. By Q4 2021 we will have installed and commissioned the three copper stills. Then we will start laying down our first New Make Whiskey Distillate, to mature here on the Atlantic Coast.

Patience

What difference do a few years make to perfection? By 2024, our Irish pot still whiskey will be available to taste. Our team are steadfast, creating a state-of-the-art distillery to become the new home of our Skellig Six18 whiskey. Our liquid will be matured, for as long as it takes, to create that sophisticated and complex whiskey flavour.

Process

Using a time-honoured process, our ingredients will be simple – barley, malted grain, water, yeast and most importantly, time, in a wooden cask maturing alongside the Atlantic Ocean. The result will be an exquisitely intricate display of colour, flavour and smell, delighting the senses.

Limited Edition

By working the stills in our own individual way, we will produce a range of whiskies that challenge the conventional. To enquire about our exclusive, limited editions casks please register interest.

The Perfect Climate

This remote location filled with the clean air and plentiful rain that roll in off the Atlantic, produces the purest water supply in one of Ireland’s few soft water areas.

This, combined with our mild climate from the nearby Gulf Stream, means we are perfectly positioned for developing and maturing our whiskey casks. The temperature here very rarely varies between 4 and 20 degrees Celsius (30 °F – 68 °F) in Cahersiveen, so our whiskey can mature steadily all year round.
