At Skellig Six18, our Triple Cask Single Pot Still Irish Whiskey is a bold expression of tradition and innovation—an ode to the most distinctive style in Irish whiskey-making. Crafted from a mash of malted and unmalted barley, then triple distilled for exceptional smoothness, this single pot whiskey is as rich in story as it is in flavour.
Matured first in ex-Bourbon barrels, then shaped by Oloroso Sherry and finally Pedro Ximénez (PX) Sherry casks, this whiskey carries the imprint of centuries-old maritime trade between the Skellig Coast and the bodegas of Jerez. Each cask lends its own chapter: the Bourbon brings warmth and vanilla, Oloroso adds depth and spice, and PX crowns it all with a velvety sweetness and dried fruit finish.
The wild Atlantic meets the stillness of cask here in Cahersiveen. In our coastal maturation warehouse, ocean air shapes the whiskey’s final character. This natural ageing process infuses it with maritime nuance and a sense of place that can’t be replicated.
Nose: Toasted oak, warm spice, honeycomb
Palate: Rich layers of dried fruit, vanilla pod, and cracked pepper
Finish: Long, silky, and slightly briny with a sherry-soaked linger
Our bottle design draws inspiration from the night skies above Skellig Michael, where ancient sailors once used the constellations to navigate their journeys. Located in Ireland’s only Gold Tier Dark Sky Reserve, our distillery honours this celestial legacy in every bottle.
