A Journey Across Three Casks

This whiskey matures across three carefully selected cask types, each contributing its own influence to the final character.

  • Ex-bourbon barrels bring warmth, vanilla and gentle sweetness
  • Ex-peated Scotch casks add depth and a subtle hint of smoke
  • Pedro Ximénez (PX) sherry casks crown the whiskey with velvety richness and dried fruit notes

Atlantic Aged on the Skellig Coast

In Cahersiveen, where the wild Atlantic meets the stillness of the maturation warehouse, nature plays a vital role in shaping our whiskey.

Ocean air circulates through the casks, influencing how the spirit interacts with the wood over time. This slow, coastal ageing process adds maritime nuance and a sense of place that cannot be replicated elsewhere.

This is whiskey shaped by land, sea and time.

Tasting Notes

Nose – Nuts, caramel and oak, with gentle hints of chamomile.

Taste – Dried fruit layered with notes of papaya, fresh jalapeño, crisp apple and a light waft of smoke.

Finish – Balanced and long, with warmth and lingering complexity.

Our bottle design is inspired by the night skies above Skellig Michael. For centuries, sailors navigated these waters using the constellations as their guide.
